Food, family and fitness Friday!

Hey everyone!

Cycle 6 of the Graduate Plan landed this week and it’s been a tough week! Work has been demanding and with another day of about 9 hours in the car on Tuesday and Wednesday being an extremely full on day I was exhausted and irritable by Thursday.

But you can’t keep a strong woman down and I was back up again today 😁

So far I’ve completed 3 out of the 4 workouts given in this cycle and they are brutal! Today was by far the worst and I haven’t even looked at tomorrow mornings yet because I’m too scared! But, I’m challenging myself more than I ever have and I am so damn proud of myself for getting this far!

Here are some of my favourites from this week, (if this is anything to go by it’s going to be a great cycle!)

Raspberry and coconut pancakes
Peanut butter bars!
Baked salmon on creamy veg!
Low carb blueberry porridge, porridge made with seeds instead of oats!
Smokey bean soup
Chicken and black bean quesadillas!

I celebrated feeling back on it today by wearing my new Just Strong vest, I am in love with it!

Plus it’s been Red Nose day so T went to school looking like this!

This weekend is a quiet one with a coffee date tomorrow followed by the last Ireland rugby game πŸ€ Scott is running the park run before his late shift and T isn’t back until Sunday lunch time so I have lots of food prep time ahead of me!
